Pumpkin Bread

from The Dining Room at The Mount Washington Hotel

Makes one loaf.

  • 1 can of pumpkin (15 oz)
  • 1 1/2 lbs of sugar
  • 3/4 cup of oil
  • 1/2 cup of water
  • 4 eggs
  • 2 lbs bread flour
  • 2 teaspoons of baking soda
  • 2 teaspoons baking powder
  • 2 teaspoons of salt
  • 1 1/2 teaspoons of cinnamon

Mix together pumpkin, sugar. oil and eggs. Mix in water. Add all dry Ingredients and mix until smooth. Pour into a 9-inch loaf pan and bake for 45 minutes, until springy to the touch.
